Fruit Loaf

Ingredients:

  • 3 Eggs
  • 3/4 cup unsweetened apple sauce ( or make your own puree)
  • 2/3 Cup Almond Butter ( or peanut butter)
  • 1/3 cup Pure Maple Syrup ( or honey)
  • 1 tsp Pure Vanilla extrat
  • 1 & 1/4 Cups almond flour
  • 1/4 Cup Tapioca Flour
  • 1 Tbsp Cinnamon
  • 1.2 Tsp Nutmeg
  • 1 tsp Baking soda
  • 1/4 tsp salt
  • 1/2 Cup raisins / Cranberries / dried apricots
  • Chopped walnuts to sprinkle on the top ( optional)

Method:

  • Preheat oven to 180′
  • Line a medium loaf tin with parchment paper, overlapping the edge for easy removal when cooked.
  • In a large bowl. whisk the eggs, applesauce, almond butter, syrup and vanilla.
  • In a separate bowl, combine almond flour, tapioca flour, cinnamon, nutmeg, baking soda and salt.
  • Stir the dry mixture into the wet mixture until combined. Fold in dried fruit.
  • Transfer the mixture into the parchment lines loaf pan and spread out evenly ( the consistency is quite dry)
  • Sprinkle with nuts and bake in a pre heated oven for 50-60 minutes.
  • Remove from the oven and allow to sit in the tin until cool. Transfer to a wite rack to cool completely
  • Serve with butter or on its own. Its is delicious toasted!
