Chicken & Leek Casserole



  • 1 whole roasted Chicken
  • 1 Large Butternut, roasted
  • 3 Sprigs of Broccoli
  • 2 Corns ( sweetcorn sliced off)
  • 6-8 Leeks
  • 1 Red Onion
  • 250 grams mushrooms
  • 1 Table spoon Garlic
  • 1 Table spoon Ghee
  • 1/3 cup chopped Coriander
  • 250 mls Cream or coconut cream



  • Roast the Chicken and allow to cool.
  • Whilst the oven is on roast the butternut on a rack.
  • Pull all of the meat off the chicken and leave to one side.
  • Heat a pan with Ghee of fat of your choice, with the garlic.
  • Add the onion and leeks and leave to cook on low.
  • When the onion starts to soften add the mushrooms, sweetcorn, broccoli and cream and leave on low until simmering.
  • Add the chicken and coriander and mix.
  • Leave on low until heated through.
  • Serve or top with butternut mash
