Roast Pork Belly

Ingredients:

  • Pork Belly
  • Salt
  • Olive oil

Method:

  • Pre Heat oven to 180′
  • Score the Fat with a sharp knife
  • Rub on Olive oil
  • Rub on a generous amount of salt
  • Place the roast, meat side down ( fat up) on a wire rack inside an over proof dish
  • Cook for 2 hours on 180′
  • Turn up the heat to 200′ and cook for a further 15-30 minutes to crisp the fat.
