- 250 grams chicken breast, sliced
- 2 handfuls of fresh basil
- 1/3 cup Walnuts or pine nuts
- 1/4 cup olive oil
- Salt and Pepper
- Pre heat over to 180′
- Add the Basil, nuts, Oil and Salt and Pepper to a blended and blend
- Add the pesto to the chicken slices and leave to marinade for about 30 minutes.
- Place the chicken covered in pesto into a tin foil pocket and bake in the oven for 20 minutes or until cooked.
