Sweet Potato Bake

Ingredients:

  • 5-6 Sweet potatoes
  • 1 Onion
  • 3 Spring onions ( optional)
  • 1 Tin Full fat Coconut milk
  • Herbs and spices for the top
  • Salt and Pepper to taste

Method:

  • Pre heat over to 180′
  • Peel and slice the Potato and place in an over proof dish
  • Add the sliced onion and Spring onion and mix.
  • Pour over the coconut milk.
  • Add herbs and spice of your choice to the top, brown onion soup mix also works.
  • Bake for 20-30 minutes until soft.
