- 5-6 Sweet potatoes
- 1 Onion
- 3 Spring onions ( optional)
- 1 Tin Full fat Coconut milk
- Herbs and spices for the top
- Salt and Pepper to taste
- Pre heat over to 180′
- Peel and slice the Potato and place in an over proof dish
- Add the sliced onion and Spring onion and mix.
- Pour over the coconut milk.
- Add herbs and spice of your choice to the top, brown onion soup mix also works.
- Bake for 20-30 minutes until soft.
