Chicken, Chilli & Cranberry Patties



  • 500grams chicken mince
  • 1/4 cup of dried cranberries
  • 1/2 cup corriander
  • 2 chillis
  • 1 tablespoon garlic
  • 1 onion or shallot
  • 2 tablespoons olive oil


  • Blend all of the ingredients together EXPECT for the chicken mince.
  • Mix the blended paste into the mince
  • Shape into balls and place on an oven proof dish
  • Pour water onto the dish enough to cover the base of the bowl
  • Bake in a preheated oven on 180′ for 20-30 minutes, depending on the size of the meatball, turning half way.
