Creamy Sprouts and Bacon


  • 250 grams chopped Bacon
  • 250 grams sprouts, halved
  • 1 onion
  • 1 tablespoon garlic
  • 50 grams sweetcorn
  • Half a red pepper
  • 2 chillis
  • Fresh Corriander
  • Noodles of your choice –
  • Tin of Coconut milk
  • 250 grams of Mushrooms
  • 1 Spoon of Ghee


  • Heat the ghee in a pan
  • Add the chopped onion, garlic, sweetcorn, pepper and chilli and soften.
  • Remove from the pan
  • Add the Bacon bits to the pan and cook.
  • Remove the bacon and return the Veg mix to the pan. There should be bacon fat still in the pan to add some flavour.
  • Add the Sprouts, coconut milk, mushrooms and coriander and cook for 2/3 minutes.
  • Add the Bacon back to the pan and stir. Cook until the Spouts are softened.
  • Salt and pepper to taste.
  • Serve with Sweet potato mash, roasted Sweet potato, wild Rice, or noodles.
