Flourless Protein Muffins

Bananas are packed with potassium and digestible (good-for-you) carbs and  give your body fuel. Bananas are great for baking, they add moisture, act as a binder, they are packed with flavour and there is no need for additional sugar. These muffins have simple ingredients and are easy to make.



3 bananas

2 eggs

3/4 cups raw oats

1 tsp baking soda

2 small scoops whey

1 tsp cinnamon

1 tsp honey optional

1 tbsp cacoa nibs

1 tbsp peanut butter

Place all of the ingredients into a blender and mix. Spoon into greased muffin tins, the rubber trays were easier to get the muffins out of, with the traditional tin muffin tray, although well greased, i had to wait for the muffins to be cold and then use a soft rubber spatula to get them out. Place in preheated oven on 180′ for 10 minutes.
