Omelettes are so versatile and can be eaten for any meal.
Omelette mixture – eggs, salt and pepper, fry the omelette mix in a pan, then grate cheese on top of the egg mix and grill to melt the cheese. I make the omelette base like this so that my family can have what ever fillings they want, without standing and cooking 4 different ones. The ‘base” is cut in 2 and then the kids and husband can add what they want from the fridge. Or the kids can take it to school for lunch instead of traditional sandwiches.
For this one the filling is left over chicken fried with pepper dews , mushrooms, spinach,chilli, chilli flakes and onion. You can use any left over you have or any combination that you enjoy. Let me know what you make.
