Ice cream is a favourite for most people, any time of the day and any time of the year.
I freeze chunks of bananas that are going very ripe and won’t be eaten to save wasting them. Freeze the chunks on a tray ( so they don’t stick together) and bag when frozen.
For this one you will need ripe Bananas, peeled and cut into chunks.
Place onto an over tray and sprinkle with cinnamon and pour on some ghee. Bake on low until soft ( 160 for 20 mins) You can either use baked banana or frozen chunks ( frozen from raw and not baked)
Freeze the baked banana chunks on a tray.
When frozen place in a blender and blitz. It takes some time, and you need to scrape down the sides of the bowl often. The banana mix goes almost chalky at first, before going to a smooth paste. You can add some coconut milk to make it very smooth. Freeze the blended mixture over night. The ice cream doesn’t last very long, ( a day or two ) in the freezer as it goes icy. I have added Cacoa powder to make a chocolate banana ice cream, you could add dark chocolate chips, honey if you like it sweeter etc.
