This is another made up recipe so quantities are a guess.
Salt and Pepper
I make this with 500g of minced chicken, 6-8 marrows, 1 onion, 2 tbs lemon juice,
Wash Marrows and grate. Dab with kitchen towel to take off some of the moisture.
Mix the marrow with a chopped onion.
Add Lemon juice, Salt and pepper and minced chicken. You can also add some chopped chilli or chilli flakes.
Shape the mixture into balls or patties and either fry in Ghee or place on a baking tray with some water to ‘line’ the tray. I cook them in the oven on 180′ for about 15/20 mins. turning half way.
The patties stay so moist from the baby marrow and can be left in the fridge for a few days as left overs or school lunches. If you peel the marrows before grating the kids don’t even notice there is veg in the pattie!
